2. “PIECE o’ CAKE?”- about the cake part of my biz
The “cake” part of my business is the part that I feel I truly get to express my creative side with. I completely adore the Personal Chef aspect of my work, but the cake part is the aspect I obsess over! I always say “people are almost always happy when it comes to eating cake!” It means celebration and festivity, milestones and occasions. It means happiness!
I also love that there are no rules when it comes to what kind of cake a couple should choose for their wedding. It used to be that a wedding cake was always white, both on the outside and the inside. It had pillars and usually stairs, always a little figurine on top. These things are great… if that’s what YOU dream of, but if it’s not then you can have whatever YOU want! Now adays there are no rules – the cake can be any color, shape, flavor, theme that you can think of. And to me… that’s when it gets fun! The more creative and challenging, the more excited I am about making it.
When it comes to rules I DO stand by, there are a few.
- A cake has got to not only be beautiful, but delicious. I can’t think of anything more disappointing that a dry, flavorless cake to wind up the event’s festivities. You’re going to spend some money on a cake ~ make sure it’s worth your money. Many people will compliment the design of a cake, but it’s a wonderful taste that will set a lasting memory with them. A couple will spend months, sometimes years, planning every detail of a wedding ceremony and reception and unfortunatly overlook the importance of the cake. As one of the last ceremonial events of the evening, and the final taste sensation your guests will enjoy - the cake is one of the final memories created for your guests. Choosing a gorgeous design and delicious flavor will make the final moments truly distinctive!
- As your baker, I like to be as personally involved with my clients as possible. I truly enjoy the consultation and tasting meeting as it is a time for us to really connect and for me to get a sense of the couples personalities and vision for their wedding day. I often spend a LOT of time emailing back and forth with couples (I’ll admit it – it mostly the bride!) to nail down details and make adjustments so that the final design is just EXACTLY as they want it. I am glad to work out these things as a team and look forward to a cooperative collaboration. When the time comes for actual production on the cake I have a sense of connection to my clients and feel a more personal touch comes through. I’ve worked in the big production of a commercial/retail bakery setting and this connection rarely happens. It’s one of the main reasons I started my own business and chose to set it up in the way I did.
- SERVICE! – service, service, service! I can’t say it enough. The simple rule of responding to your customers requests is one that many businesses overlook. I feel that my commitment to prompt, reliable and responsive service is probably the most influential reason my business has succeed to date. The simple act of returning a phone call or email, or making an effort to reach out and touch base, going just a step beyond what is expected, or promptly addressing and resolving issues (they are rare, but things do happen! I’m human too after all!) are such simple and easy things to make a customer feel valued and appreciated. Afterall, with them I would have no cakes to make! And making cake makes me happy… so, happy customer = happy Kelly! =)
- Quality ingredients are essential to the final outcome. I strive to find and use the highest quality ingredients on the market to make my cakes, fillings and icings. Fresh eggs, butter and cream as well as high quality vanilla and other extracts, chocolate, and other flavoring agents make an impressive difference over lesser quality options. Of course, using the the lower end products could make for a higher profit margin for me, or I could offer cakes at at lower price per serving, but my belief is that you get what you pay for. I absolutely encourage my potential clients to shop around and I am actually pleased when they’ve tried a few other places ~ because I know once they taste MY cake …. it will sell itself! (if I do say so!lol~) =)
